The Dead Rabbit’s Usquebach (oos-ke-bah) Recipe

Impress your guests with The Dead Rabbit’s specialty “Water of Life” cocktail.

Usquebach

Ingredients

Slane Whiskey: 750ml 

Water: 750ml 

Lemon Juice: 250ml 

Cane Sugar: 250g 

Cloves: 10

Star Anise Pods: 4 

Cinnamon Stick: 2 

Coriander Seeds: 1 tbs 

Caraway Seeds: 1 tbs 

Grated Nutmeg: 2 tbs 

Lemon Zest: 4 whole lemons 

Instructions

Toast spices on a dry pan, once fragrant add sugar and water and bring to a simmer. Cook on a low temperature for 20 minutes, making sure the sugar has completely dissolved. 

Strain through a cheesecloth or sieve, and then add the lemon juice and Slane whiskey.
